This Lemon Olive Chicken dish is one my all time favorite easy dinners to make. I had my first taste of this dish years ago when my friend Carrie made it and I had seconds and wanted thirds. Healthy, hearty, saucy, salty, and forgiving, it is definitely one of my go-to recipes that I make at least every week or two. I make it with quinoa and baby spinach/chard/kale (from TJ's), but feel free to sub in brown rice, couscous, asparagus, or any other greens you have on hand. Enjoy!
