Recipe: Gluten Free Buckwheat Brownies

I can't believe it's been a month since my last post. Oops! I thought I would have a lot more time after quitting my day job to post more regularly but I have been keeping busy with kid stuff and freelance work...oh, and getting a bit politically active.  Honestly, what did I do when I had my other job?

Anyway, I'm back (mostly) with this awesome recipe for Gluten Free Buckwheat Brownies from the Alternative Baker book by Alanna Taylor-Tobin. The original recipe calls for Chestnut Flour but says a good alternative (to the alternative flour) is buckwheat flour which is what I had on hand. These brownies were dark and fudgey with that familiar crinkly top. So good! I ended up slicing them up into narrow rectangles to feed Lucas' soccer team (one of the kids on the team is gf) so I could have some too. ;) Enjoy!

Recipe: Gluten Free Chocolate Banana Bread

Banana bread is one of my favorite things to bake. I usually have a bunch of super ripe bananas in the freezer that are perfect for making sweet and moist banana bread. I decided to use my usual recipe from Flour bakery but adding healthy raw cacao powder, cacao nibs and making it gluten free with brown rice flour. Keep in mind this is the healthy version and not super sweet or chocolatey. If you want to go that route, I would swirl some melted chocolate chips into the batter. Yum! Theo's 4th Birthday Party

A few weekends ago we celebrated Theo's 4th birthday party. Remember his music-themed 3rd birthday party last year? About four months before his party I asked Theo what kind of party he wanted. He said, "A chocolate party!" Two months later he said the same thing. Admittedly, I was a bit stumped. I mean, how awesome would a chocolate party be!? But then again, every parent would kill me if all I served was chocolate everything. So then I came up with the idea of "Theo's Chocolate Waffle Bar Party" that would incorporate his love for chocolate AND waffles--plus, give everyone different options including savory ones.

Inspired by my trip to Dinette in L.A., I decided to use metal trays lined with a custom kraft liner. The whole look was made even cuter with these bear face party napkins from my friends at Harlow & Grey. I vowed to never cook all the food for a birthday party again (Lucas' round-themed 2nd birthday party nearly killed me) but this waffle bar was pretty easy. I ordered scrambled eggs and popcorn chicken from the Whole Foods catering department in Berkeley, made a few batches of chocolate waffles in advance and froze them, made some syrups in advance, and just cut some fruit and baked tater tots the morning of. Oh, and you know what saved me was this little guy from Amazon.

Ready for a heart melt? Lucas made Theo this birthday hat out of paper, tape and string--one for Theo and another tiny one for Theo's "baby" stuffie.

Somewhere along the way Theo transformed into a ninja. Haha!

We hired the best kids band ever Your Song My Song. They were taking requests and Theo wanted "Bad Romance" by Lady Gaga. So they figured out how to play it! High five!

This is the face of a happy birthday boy!

The party favors were delicious butter waffle cookies from Trader Joe's hand dipped in semi-sweet chocolate and sprinkled with rainbow nonpareils. I packaged them in glassine bags and sealed each one with a custom label.

The word "healthy" in this chocolate pudding recipe refers to a secret ingredient that you'd never guess -- avocado. I first learned about this recipe from Jennifer Tyler Lee of 52 New Foods at the Williams-Sonoma event I attended a while back. One taste and I was hooked! Luckily the recipe is in her book, The 52 New Foods Challenge, which I made one afternoon with the help of Lucas. Scroll down and you'll see Lucas' favorite part about making it!

One tip I loved from Jennifer was not to hide any of the ingredients but let your kids make it with you and see everything that goes in it.

It's been a few weeks since I've posted a recipe -- the last post was about these Soft Baked Pretzels. It's not that I haven't been baking and cooking away, but rather I've been trying to perfect my version of the best classic chocolate chip cookie. After numerous recipe testings and listening to feedback from my select group of cookie critics, I finally found "the one" that met all my chocolate chip cookie criteria -- crispy around the edges, on the thinner side but not flat, chewy in the center, not too sweet, a little salty, perfect chocolate to dough ratio, puddles of melty layered chocolate, good the next day, and most importantly, not cakey. I hate cakey.

The recipe comes from Ashley Rodriguez of Not Without Salt on Food52 (one of my favorite blogs -- have you seen their dreamy office kitchen workspace makeover on Remodelista?). I even tried altering the recipe just a bit to see if some of my favorite elements (espresso powder, semi-sweet chocolate chips, etc.) from other recipes would make this even better. But it is perfect as is according to me and my taste buds.

A few must do's to make this cookie perfect:
+ Use a high quality (it really makes a difference -- the cheap stuff doesn't melt/puddle the same or taste the same) dark chocolate bar such as Divine or Valrhona and chop it up. Don't think I'll ever go back to chips unless it's an emergency.
+ Don't overmix
+ Always refrigerate the dough
+ Always sprinkle that flaky salt on top before baking
+ Let the cookies cool on the baking sheet for at least 5 minutes

I recently went to a craft night at my good friend Lisa's beautiful house where my other good friend Lisa taught us how to make simple beaded necklaces. I offered to make a dessert but realized I didn't have a lot of time to get too fancy. But if you know me, I love baking, but it had to be something simple. I went straight to my new cookbook Top with Cinnamon by Izy Hossack, a rad 19-year old who bakes amazing things and takes gorgeous photos of it all.

I love chocolate cake and this Swedish Chocolate Cake could not have been easier to whip up. With only six ingredients plus some powdered sugar for dusting, I was able to bake this amazing cake in under 30 minutes. Done and done. I loved this cake and the girls at craft night did too. Think brownie but with a molten chocolate center. No frosting necessary! Yum!

Food: Baking with a 6-year-old

Several weeks ago my good friend Lisa asked me if her 6-year-old daughter Zoya could come over and bake something with me sometime. She knows I love to bake and apparently Zoya loves it too (she actually reminds me of ME as a kid). I didn't hesitate for a second to say yes. I decided that I wanted to go all out and make this strawberry and chocolate layer cake with chocolate ganache (instead of the strawberry swiss meringue buttercream frosting we made a simple cream cheese frosting). A little ambitious for Zoya's first time, but seriously she was the perfect assistant -- she listened well, followed directions extra carefully, asked questions, and was a total cutie eager beaver to learn and do things right. Did I mention she's six? I mean, she basically made the entire thing herself with me handling the grown up safety stuff. The cake tasted amazing and most importantly, we had so much fun and we both want to do it again! And p.s. I took way too many photos of her Hello Kitty tattoo. So cute!
